In proportion to the population, Salzburg's profusion of award-winning restaurants make it Austria's gourmet capital. Stars and toques are not only found in a traditional ambiance, but also in extravagant settings featuring trend-setting architecture and innovative design.
On a global scale, the most spectacular address is at the airport. "Hangar 7“, the Red Bull empire's social and gastronomic figurehead, quickly advanced to become the architectural landmark of modern-day Salzburg.
The "approach" is already impressive: the entrance is illuminated on both sides like an airfield, airplanes take off and land at regular intervals in the background. Guests can even arrive by plane and land on the private landing strip next to the Hangar. A synthesis of the arts, the hangar stretches 14 meters high and is made of 1,200 tons of steel and 7,000 square meters of glass in the shape of a wing. A 6,000 square meter glass dome spans the tremendous area, accommodating a unique collection of historic Flying Bulls aircraft, Formula I racecars and continuously changing modern art exhibitions. The "Three-sixty Bar" hovers just under the roof, high above the ground – with a glass floor – and is only accessible via a venturesome "footbridge“.
"Hangar 7“ is not just an event venue and art gallery but also houses one of the most fascinating gourmet restaurants in Europe, the "Ikarus“. Under the patronage of the legendary chef, Eckart Witzigmann and chef Roland Trettl, a different star chef from the best restaurants around the globe is flown into Salzburg each month. Whether from New York or Hong Kong, whether Asian fusion or imaginative Spanish creations - the chef individuates the cuisine at the "Ikarus“ a whole month long, inviting guests on an epicurean trip around the world.
Fingerfood, designer antlers and a Michelin star
Directly in Getreidegasse, close to Mozart's Birthplace, Red Bull translated another revolutionary dining idea into reality: Jörg Wörther, once awarded four toques by the Gault Millau restaurant guide and declared "Best Chef of the Decade", presents his savory cones at the "Carpe Diem". These innovative cones come with exquisite fillings and are served in the stylish ambiance of the bar and lounges as "finest fingerfood". The restaurant offers entire cone menus including miniature sweet cones.
The Museum of Modern Art, perched directly above the Old City, is not only famous for its exhibitions. Designed by the Italian star designer Matteo Thun in a cosmopolitan style with a covert, alpine irony displayed by a ceiling sculpture made of intertwined antlers, the "m32" is an attraction in itself. Connoisseurs can look forward to a royal breakfast, midmorning coffee and cake and an exquisite lunch or dinner (1 Gault Millau toque). The stunning view from the Mönchsberg overlooking the historic city center is thrown in as an extra bonus.
One of the best newcomer restaurants during the last few years is not on but tucked away in the Mönchsberg. The "Magazin" is an architectural ensemble of renovated burgher houses with a modern glass gallery that appears to be suspended from the rock and a cavern hewn out of the mountain. Guests dine at a table seating up to 28 people to enjoy creative, modern cuisine, winning one of the coveted Michelin stars. Fine wines and epicurean delights can be purchased in the adjoining shop.
One would not expect to find one of the city's best restaurants in a tourist attraction such as Hellbrunn Palace. Hidden from the tourist flow, kitchen chef Michael Pratter has found an exquisite workplace at the "Atelier zu Hellbrunn". A small but exclusive restaurant for 25 people in which wall collages and large-scale "new metal art" paintings by the Salzburg artist, Günther Edlinger, blend in with the historic walls. Chef Pratter, winner of two stars, combines traditional and modern fare, Austrian and Mediterranean food with a touch of French cuisine, renowned for his popular courses of up to ten miniature dishes, the so-called amuse gueule menu.
